You. Guys. I just love when a recipe comes together. Like one of those “what’s in my refrigerator” kind of nights and somehow the stars align and you create a culinary masterpiece. Tonight was one of those nights! We made homemade pizza (which we love to do on Friday nights).
Please note, this recipe as made is free of peanuts, tree nuts, soy, eggs, fish and shellfish. The crust is made with milk and wheat, but if you'd like an alternative for your specific dietary needs I'm happy to provide! Just let me know:)
Here’s how it came together:
First for the dough-
Mix 1.5 cups Fage plain Greek yogurt with 1.5 cups self-rising flour until it forms dough. Then knead it with regular all-purpose flour for a few minutes, roll out and you’re ready for the toppings!
Now for the toppings-
Today I first caramelized some onions (sliced them thin, sautéed for 10 minutes in olive oil, added a little pure cane sugar and sautéed for a few more minutes until brown). You could probably skip the sugar for added health but I just love the slight sweetness it offers:)
I then brushed the dough with olive oil, added some dried rosemary, arugula, chopped garlic, the caramelized onions, sliced dried figs, goat cheese and sliced Granny Smith Apples. I then topped it with some fresh cracked pepper.
Once toppings are in place you bake in a preheated oven at 450 degrees for 12-14 minutes on one of the upper racks.
